Vitamin A is a fat-soluble vitamin that is mainly stored in the liver. It exists in two forms: retinol and carotenoids.

The first, retinol, is present only in foods from animal sources. It is the only form of vitamin A that is bioavailable (available to the body).

Carotenoids, the second type of vitamin A, are found only in plant foods. There are over 600 different types of carotenoids, but only the provitamin A type carotenoids are beneficial to health, once converted to retinol.

Food sources of retinol are butter, cod liver oil, fatty fish, egg yolks and whole milk. Sources of carotenoids are dark green leafy vegetables, peppers, sweet potatoes, broccoli, kale, parsley and carrots.
